Mappillai Samba Rice, a traditional rice variant cultivated in Tamil Nadu’s Cauvery delta region, is renowned for its distinct aroma, taste, and texture. The name, translating to “bridegroom’s rice,” suggests its original association with wedding feasts. This tall rice variety matures slowly but exhibits resilience to pests and diseases due to the favorable conditions of the Cauvery delta.

Characterized by short, plump, reddish-brown grains, Mappillai Samba rice, when cooked, becomes soft, fluffy, with a unique nutty flavor. Popular in South Indian cuisine, it’s used in dishes like biryani, pongal, and pulao.

Considered a healthier option due to its low glycemic index, Mappillai Samba rice is rich in antioxidants, iron, and calcium. Despite its increasing popularity globally, its slow maturation and limited yield contribute to its rarity and higher cost.

How to cook:

1. To begin making the Mappillai Samba Sadam Recipe – Firstly, clean the Mappillai Samba Rice by removing any dust and debris.

2. Now in running water, wash the Mappillai Samba Rice in 2-3 exchanges of water. Drain the water completely from the rice.

3. To Soak the rice – Heat 4 cups of water in a pan and allow water to boil once. Turn off the flame.

4. Now add washed Mappillai Samba Rice and Soak for 2 hours.

5. To cook the rice – In a rice pot, add the remaining water and the soaked water (drain the water from the soaked rice and add) add salt to taste and allow the water to boil.

6. Once the water is boiling, add the soaked Mappillai Samba Rice and gently stir the rice.

7. Now close the lid halfway to the rice pot and cook for 30-40 minutes.

8. Keep the flame moderate throughout cooking and stir the Mappillai Samba Rice in between the cooking.

9. After 30 minutes of cooking, take the rice from the pot and check the doneness. If rice is not cooked, keep cooking the rice.

10. Keep checking the doneness of the rice.

11. Once the rice is completely cooked, you can easily mash the rice between your fingers.

12. Once the rice is cooked, drain the excess water completely from the Mappillai Samba Sadam.

13. Within 35-45 minutes, Mappillai samba rice
